You know how you really want to make something and then realize you have non of the ingredients? Yeah, me too.
I was all ready to make this bruschetta the other day and opened the freezer. And realized the pepper and onion mix I thought was there, had already been consumed. But, I was not to be put off. I started searching the entire freezer for something to sauté. What i came up with was a bag of minced green peppers and pearly onions.
Well, beggars can’t be choosers, so I pulled both out along with the salt, pepper, and olive oil. And surprisingly, it turned out deliciously! I was so pleasantly surprised. So, I thought I would share my recipe with you and you can enjoy my experimental creation.
Pepper & Onion Bruschetta
- 1 bag of frozen minced bell peppers
- 1 bag of pearly onions
- olive oil
- french bread slices
Cover the bottom of a skillet with olive oil. Then put all ingredients into skillet and season to taste. Sauté until everything is cooked, or until pepper look dark green.
Take your french bread slices and toast them in the oven on 200 degrees for about 10-15 minutes. Take out, cover with pepper mix and enjoy!
